Red Cabbage Coleslaw

A colourful coleslaw - perfect for baked potato topping or with the next BBQ.

Type: Accompaniments


Half red cabbage
1 onion
1-2 carrots
2 sticks celery
1 capcisum
1 tub organic yoghurt (full or low fat),
1-2 teaspoons dried dill weed or fresh if available
(if using fresh use 1 to 1.5 tablespoons)
half to 1 teaspoon dijon or wholegrain mustard

Remove hard core from red cabbage and shred finely. Grate carrots, slice red pepper, celery and onion finely and mix together in large bowl.

Mix yoghurt, mustard and dill thoroughly and mix through vegetable ingredients to coat well.
