Quick Zucchini Quiche

A simple and quick quiche for busy cooks.

Spread 1 cup of breadcrumbs evenly over base of a well-greased 25cm flan dish or pie plate. Combine 1 small grated zucchini, 1 small chopped brown onion and 1 clove crushed garlic in a medium bowl. Add 4 lightly beaten eggs, 310ml (1 1/4 cup) cream, 1/4 cup grated parmesan cheese, 1 cup grated cheddar cheese and 1 Tab wholemeal or plain self raising flour. Mix well. Spoon mixture gently over crumbs, top with slices from 2 small tomatoes. Bake quiche uncovered in moderate oven for 45 minutes. Recipe: Vegetarian Cooking - Women's Weekly Cookbooks, p46
