Baked Potato

An easy meal on a cool night.

Choose two (or more if needed) large potatoes. Suitable varieties are Coliban, Desiree, Pontiac or Sebago. Scrub the potatoes to remove any dirt. If you desire, prick the outside with a fork, rub with oil and salt.

Place in a 180C oven for an 1 - 1 1/2 hrs until baked right through. You can test this by piercing the potato with a skewer and if it easily removed the potato is cooked.

While waiting for the potatoes to cook prepare some toppings such as coleslaw or mexican beans.

To serve cut the potato with a cross and open it up. Place butter (garlic or herbed butter for some flavour), grated cheese (Tasty or your favourite hard cheese), any toppings you choose and then some sour cream or yoghurt.

Serve with a side salad or tossed green vegetables.
