Apple & Red Onion Marmalade

Delicious accompaniment with Tofu Steaks or Sausages

4 tbsp organic extra virgin olive oil 900g red onion, thinly sliced 1/2 cup demerara sugar 2 apples (Cox's Orange Pippin or Pink Lady) 6 tbsp organic cider vinegar Heat the oil in a large, heavy-based saucepan and add the onions.

Stir in the sugar and cook, uncovered, over a medium heat for about 40 minutes, stirring occasionally, or until the onion have softened and become a rich golden colour.

Peel, core and grate the apples. Add them to the pan with the vinegar and continue to cook for 20 minutes until the chutney is thick and sticky. Spoon into a sterilized jar and cover.

When cool, label and store in the fridge for up to 1 month.
